Raised donuts that are still warm when the door unlocks at five. Ube, matcha and Biscoff beside apple fritters and old-fashioneds — the whole case rotates, so the hard part is stopping at one.
What's in the case
Two long cases, filled before sunrise and refilled through the morning. Specialty flavors rotate — ube and matcha are regulars, Biscoff shows up in trays, and the fritters go fast.
Purple yam glaze under toasted coconut, and a matcha ring with a red drizzle. The two that stop people mid-sentence at the counter.
Cookie-butter glaze, crushed crumb, whole biscuit on top. Made by the tray — and gone by the tray.
Apple fritters, maple and chocolate old-fashioneds, twists, long johns, glazed rings, buttermilk bars and sprinkles for the kids.

California-style, Wauwatosa hours
The California donut-shop approach is simple and unfussy: proof the dough overnight, fry it in the dark, glaze it by hand and put it out while it's still soft. Nothing sits. Come at six and you'll taste the difference against a two-hour-old donut.
It's a family shop — a counter, two cases, a coffee machine and a kitchen in back. Order a dozen and someone will still ask if you want them warmed.
